sliced almonds
plus 1 tablespoon for the top

whole wheat flour

buckwheat flour
1/2

spelt flour

baking soda

salt

teaspoon
ground cinnamon

teaspoon
ground nutmeg

cup
mashed sweet potato
1/3
cup
sugar

tablespoons
coconut oil
liquid

teaspoon
pure vanilla extract

Instructions
Preheat oven to 350°F and grease a 9x9 square pan.
Chop 1/2 cup almonds in a food processor until very fine. Mix together with flours, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, stir together sweet potato, sugar, coconut oil, vanilla, and egg.
Stir in dry mixture, and spread batter into prepared pan. Sprinkle with remaining almond pieces.
Bake for 20 minutes, until a toothpick inserted in the center comes out clean.
