Trim stem ends from snow peas. Make a small cut under the tip of the other end and gently pull tip down the length of the pod to remove the fibrous string.
Set a skillet or sauté pan over medium heat. Add the olive oil.
When the oil is hot, add the garlic and ginger and cook for 30 seconds, until fragrant.
Add the snow peas and stir to coat. Cook for 2-3 minutes, until the peas are bright green and crisp-tender.
Turn off heat and season to taste with salt, pepper, and crushed red chile flakes.
