Ground Bison Tacos
Lean ground bison is a great alternative to beef for classic taco filling. Don't forget your favorite toppings!

Ingredients

olive oil
1
pound
ground bison
1/2
cup
chopped onion

tablespoons
taco seasoning
plus more to taste

tablespoons
tomato paste
1/4
cup
water

tortillas
Instructions
Set a sauté pan over medium-high heat and add olive oil.
Once oil is hot, add ground bison and onion and cook, breaking up meat into small pieces. Cook until browned and no pink remains, about 7 minutes.
Add the taco seasoning and stir well, cooking until fragrant.
Stir in the tomato paste and water, and reduce heat to medium-low. Cook for 2-3 minutes to meld flavors.
Portion into tortillas and add your favorite toppings.
Notes
You can swap the tomato paste and water for ¼ to ? cup tomato sauce, or use your favorite salsa.
