This quick and easy ginger salad dressing is the perfect thing to enliven your salad!

Ingredients
1/2cupextra virgin olive oil
1/3cuprice vinegar
1tablespoonpeeled and finely grated fresh gingersee notes
1small clove garlicminced
2teaspoonssoy sauce
1tablespoonhoneyor granulated sugar
1/2teaspoonDijon mustardoptional, see notes
1/4teaspoonkosher saltor to taste
1/4teaspoonground black pepperor to taste
Instructions
Whisk the ingredients together in a small bowl or puree in a blender. Alternately, you can combine ingredients in a jar with a tight fitting lid and shake to combine.
Taste and adjust seasoning if desired.
Store in an airtight container in the refrigerator for up to 1 week.
Notes
Makes about 1 cup.
Use a microplane or the small holes on a box grater to grate the ginger.
Adding the dijon mustard will help keep the dressing emulsified, preventing it from separating.
