Broccoli White Bean Salad
Broccoli white bean salad is a quick and satisfying lunch.

Ingredients
1/2
pound
broccoli
chopped
1
teaspoon
olive oil
2
tablespoons
minced onion
1
can cannellini beans
rinsed and drained
1/4
cup
chopped fresh dill
2
tablespoons
lemon juice
Salt and pepper to taste
Instructions
Steam broccoli over a pot of boiling water until bright green and tender, about 3-5 minutes. Set aside.
In a large skillet, heat olive oil over medium. Add onions and saute 2 minutes.
Add beans and cook about 2 minutes, then add broccoli and dill and stir to combine.
Stir in lemon juice, salt, and pepper. Taste and adjust seasoning, and serve.
Serve warm, room temperature, or store in the fridge and enjoy cold.
