Beat together softened butter and powdered sugar until light and fluffy.

Add lemon zest and beat again to combine.

Add in flour and salt.

As you mix, it will look dry and crumbly, but keep going until it clumps together.

Turn out onto a surface lightly dusted with powdered sugar and shape into a rectangle.

Roll about 1/8 inch thick and cut into squares or rectangles.

Arrange on a lined baking sheet and bake for about 10 minutes at 325°F. Cool completely.

To make the glaze, whisk together powdered sugar and lemon juice until smooth.

Dip half the cookie into the glaze and let excess drip off. Decorate with more lemon peel. Store cookies once glaze is set.
