How to Make  Ricotta Cheese

Ricotta-style cheese is easy to a make at home with just a few ingredients and tools.

gather together

1 gallon low-pasteurized or raw milk

apple cider vinegar

cheesecloth

salt

candy thermometer

large nonreactive stockpot

colander

Pour the milk into the pot and heat until it comes to 175°F.

Add vinegar and stir. The milk will separate into curds and whey.

Scoop the curds into a colander set over a bowl and lined with cheesecloth.

Let drain until cheese is desired texture, then salt to taste.
