For this recipe you'll need gochujang, a spicy-sweet hot pepper paste. You can find it at Asian supermarkets, and increasingly in major grocery store chains.
Heat levels vary so be sure to check the label!
Trim ends off Brussels sprouts and remove any wilted outer layers, then halve or quarter.
Toss with olive oil and roast for 20 minutes, stirring halfway through.
Whisk together gochujang, honey, and soy sauce, then drizzle over sprouts. Return to oven for 5-10 minutes.
Remove from oven once sprouts are caramelized to your preference.
Serve with your favorite protein or add to rice bowls or soups.
