Easy Gingerbread Pancakes

Love gingerbread? These spiced hotcakes are the perfect Christmas pancakes!

Gather ingredients

Eggs

Brown sugar & molasses

All-purpose flour

Milk

Baking powder & baking soda

Melted butter

Spices: ginger, cinnamon, cloves, salt, and nutmeg

In a medium bowl, beat eggs until frothy.

Pour in milk.

Add lightly packed brown sugar.

Pour in molasses, using a spoon or silicone spatula to scrape the sides of the measuring cup. Whisk until blended.

In a large bowl, combine dry ingredients, then whisk in wet ingredients.

Pancake batter should be mostly smooth with a few small lumps.

Rest batter while you preheat griddle, then whisk in melted butter.

Using a ¼-cup scoop, pour batter onto prepared griddle.

Cook about 3 minutes, until bubbles have formed and outer edges look dry.

Flip and cook on the other side for about 2 minutes. Keep warm in microwave while you make remaining pancakes.
