easy buttermilk pancakes

A stack of fluffy buttermilk pancakes is the perfect way to start the weekend! You don't need a boxed mix to whip up these easy pancakes.

Gather ingredients

Flour

Granulated sugar

Salt

Baking powder & baking soda

Buttermilk

Eggs

Vanilla extract

Melted butter

In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.

Pour buttermilk into another bowl or large liquid measuring cup and add egg.

Add vanilla and whisk until mixture is smooth and blended.

Pour buttermilk mixture into dry ingredients.

Use a whisk to blend ingredients together. The flour should be well incorporated, with a few lumps in the batter.

The batter should be pourable, but not runny. Add more flour or buttermilk as needed.

Preheat your griddle. When it is ready, whisk melted butter into batter.

Pour batter onto griddle and cook until bubbles start to form and edges look dry. Flip and cook until golden.

Serve with plenty of butter and syrup for topping.
