Set over medium heat and whisk in water, cinnamon, allspice, and lemon juice.

Once sugar is dissolved, add cherries and bring to a boil.

Reduce to medium-low and cook, stirring often, for 5-10 minutes to thicken.

Mixture will go from cloudy to red and glossy. When it is thick, remove from heat.
