Maple Apple Bites are perfect for after school snacking.

When he walks through the door, he shrugs off his backpack, dumps his things by the door, and wanders into the kitchen for a snack. If there is homework, he does it hurriedly, because his goal is to be ready within 30 minutes, settled on the sofa to catch Odd Squad.

He’s been obsessed with the show ever since it started, and asked me on the daily when it would be on Netflix, or maybe he could just check to see if it was there? At his age, he doesn’t understand how sometimes, you just have to wait for the show to be aired when the station says.

Thankfully, Netflix did add Odd Squad over the summer, so he can get back to surreptitiously learning about math in the setting of extremely wacky situations more than one episode at a time. I can’t really blame him โ€” I was enthralled with Reading Rainbow as a kid and know how great it was to have a show that felt like it was created just for me and my friends.

To celebrate the return to school and our afternoon routine, I baked up a bunch of what I’m calling Ms. O’s Maple Apple Bites.

Ms. O is the fearless, often grumpy leader of the Odd Squad team, and I’m pretty sure she knows what it’s like to get a case of the hangries. (If you don’t know, this is when you’re hungry and your blood sugar is low, and you just get irrationally angry at everything. This explains a lot about children. Children are always on the verge of hangry.)

These bites are made with whole wheat flour, shredded apple, and maple syrup, making them slightly sweet but also filling to keep kids settled until meal time. There’s also no oil, because the apple has enough moisture to not require it โ€” much like when swapping in applesauce for oil in other recipes.


I baked them up in a mini donut pan just for fun. My kids get pretty excited about the idea of donuts, so even though these are more like muffins than donuts, they seem like a completely different treat to my kids.

These are best on the day you make them, but store well for a few days. I recommend reheating them very briefly before eating, as it will soften them up a bit (whole wheat baked goods can get a little tougher as they rest).

Ingredients
  

  • 1 cup whole wheat flour
  • 1/3 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 3 tablespoons maple syrup
  • 1/3 cup milk
  • 1/2 cup shredded apple, about 1 medium apple

Instructions

  • Preheat oven to 350ยฐF and spray a mini donut pan with nonstick spray (one with flour works great).
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • In another bowl, whisk together egg, vanilla, maple syrup, and milk, until egg is beaten and ingredients are combined.
  • Pour the wet ingredients into the dry and stir until just incorporated.
  • Stir apple into the batter. Do not overmix.
  • Fill donut wells about 1/2 full, using a spoon to spread dough evenly around the circle. Bake for 10 minutes.
  • After baking, let rest in pan 1 minute, then turn out into a cooling rack.
  • Repeat with remaining batter.
  • Eat while warm, or let cool completely and store for later.
