This cheeseburger casserole recipe is one I’ve been making variations on for years, and I finally decided to get it down in writing!
From the seasoned meat to the flaky biscuit topping, every bite calls back to that classic cheeseburger flavor.
I really love how easy this recipe is to throw together, too โ I almost always have everything I need on hand! Just add your favorite side veggies or salad and you’re set.

Ingredients for cheeseburger casserole

You’ll need:
- Ground beef
- Onion
- Garlic powder
- Tomato sauce
- Tomato paste
- Dill pickles, plus pickle juice
- Yellow mustard
- Cheddar cheese
- Biscuits – You can make my homemade buttermilk biscuits, your favorite recipe, or use premade biscuit dough.
How to make this recipe
Preheat the oven to 425ยฐF. Lightly coat a 9×13-inch casserole dish with butter or nonstick spray, and set aside.
If you’re making your own biscuits, go ahead and mix up the dough now, then set it aside.
If you are using premade (canned) biscuits, follow the package directions for temperature. The baking time will remain the same.
Set a large skillet over medium heat and add olive oil. Add the beef along with a pinch of salt and pepper. Cook the meat, breaking up into smaller pieces, for about 5 minutes. Drain off excess fat as needed, but leave the meat in the pan and return to the heat.
Add the onions and cook until softened, which should take about 5 minutes.
Remove skillet from the heat and stir in the garlic powder, tomato sauce, tomato paste, pickles, pickle juice, and mustard until evenly mixed. Taste, and add salt and pepper if needed, or adjust other seasonings.
Transfer the meat to the casserole dish, creating an even layer by pressing with a spatula. Sprinkle on the shredded cheese.
Roll out your biscuit dough to about ยฝ-inch thick. Cut into circles. Gather scraps to reroll and cut as needed.
Cut your biscuit circles into quarters, then arrange over the meat and cheese. Brush the tops with melted butter.
Place the casserole in the oven and bake until the biscuits have risen and are golden brown, 18-20 minutes.
Let cool briefly to let the juices settle before serving.
Recipe suggestions
Add your other favorite cheeseburger toppings to the mix! I like using diced cooked bacon for a bacon cheeseburger spin, or caramelized onions to level up the flavors. Diced fresh tomatoes are a great addition as well, but keep in mind they will add more moisture.
Swap the cheddar cheese for shredded pepper jack, smoked cheddar, or other shredded cheeses.
To save time, you can swap the homemade biscuits for canned biscuit dough. Simply separate and cut each biscuit into quarters as shown.
Dill pickle relish can be swapped in for the chopped pickles. Reduce the amount to 1/4 cup and omit the pickle juice.

Cheeseburger Casserole
Ingredients
- 1 tablespoon extra virgin olive oil
- 2 pounds ground beef
- 1 cup diced onion
- Fine sea salt and ground black pepper, to taste
- 1 teaspoon garlic powder
- 8 ounces tomato sauce
- 1 tablespoon tomato paste
- 1/2 cup diced dill pickles
- 1 1/2 teaspoons pickle juice, from the jar
- 2 tablespoons yellow mustard
- 2 cups shredded cheddar cheese
- 1 recipe homemade biscuits dough, cold
- 1 tablespoon unsalted butter, melted
Instructions
- Preheat the oven to 425ยฐF. Lightly grease a 9×13 casserole dish.
- Heat the olive oil in a large skillet over medium heat. Add the beef along with some salt and pepper. Brown the meat, using a spatula to break it up into smaller pieces as it cooks, about 5 minutes (itโs ok if itโs not completely cooked through at this point since it will have more time in the next step). Drain away any excess fat.
- Stir in the onions and cook until softened, about 5 minutes.
- Remove from the heat and stir in the garlic powder, tomato sauce, tomato paste, pickles, pickle juice, and mustard. Taste; add salt and pepper if desired.
- Transfer the mixture to the prepared casserole dish, pressing it evenly into the pan with the spatula. Top with the cheddar cheese.
- Roll out the biscuit dough on a lightly floured surface until itโs about 1/2-inch thick. Use a 3 1/2 inch round cutter (or similar) to cut the biscuits, rerolling the dough a couple times as needed. Cut each biscuit round into quarters.
- Place the biscuits pieces evenly over the meat and cheese, then brush the tops with melted butter.
- Bake until the biscuits are risen and golden brown, 18-20 minutes.
