Rinse beans and remove any debris.

Add to a pot and pour in tap-hot water, plus salt, half an onion, and bay leaf. Bring to a boil.

Once boiling, reduce heat to low and cover. Let simmer about 2 hours.

Remove onion half and bay leaf. Stir in chopped onion, jalapeño, garlic, and cumin. Cook 1 hour.
