01 Black eyed peas or fresh purple hull peas

02 Chicken stock

03 Smoked sausage

04 Onion, garlic, & spices

06 Kale, collards, or Swiss chard

If using dried beans, soak at least 2 hours or overnight.

Wash and dry kale. Strip the leaves from the stems. Discard stems and chop leaves.

Combine all of the ingredients, except kale, into the slow cooker.

Cook on low for 6-8 hours. In the last hour of cooking, add kale and stir well.

When beans are soft and greens are tender, serve as a stew or over rice.
