Arrange cubed bread on baking sheet. Drizzle with oil and bake until toasted.

Core and chop tomatoes. Sprinkle with salt and set aside.

Let the toasted bread cool slightly, then transfer to a bowl.

Whisk together oil, vinegar, mustard, garlic, salt and pepper. Add collected tomato juices if desired.

Add tomatoes, onion, and basil to the bread. Pour over the dressing and mix well.
