Vibrant and refreshing, carrot salad is perfect for summer cookouts and parties!

Gather ingredients

Carrots

Parsley

Champagne vinegar

Olive oil

Dijon mustard

Honey

Salt and pepper

Grate carrots using a food processor or manual grater and transfer to a large bowl.

Using the same processor, add olive oil and vinegar.

Add fresh flat-leaf parsley.

Add Dijon mustard and honey. Put on lid and pulse until the parsley is chopped to your liking and dressing is mixed.

Taste dressing and add salt and pepper as desired.

Pour half the dressing over the carrots and mix well. Add more dressing to taste, or save for a later use.

If desired, add raisins, chopped nuts, or more fresh herbs.

Serve chilled or at room temperature with grilled chicken, burgers, and more!
