Perfect for spring, bacon wrapped asparagus is easy to prepare. With just a handful of ingredients, it’s ideal as a side dish or even a party appetizer.
Asparagus is one of my favorite foods for welcoming spring.
There’s just something about it that automatically brings to mind warmer days, flowering bulbs, and later sunsets.
It’s great in recipes like quinoa primavera or ham asparagus scones, and shines as a side dish.
This bacon wrapped asparagus is a classic for good reason. Tender roasted asparagus and perfectly crisped bacon — what’s not to love?
Asparagus stalks are lightly oiled and seasoned and then wrapped in bacon to make individual bundles that are perfect for serving at a dinner party or just on a Wednesday night.
If you’re looking for easy ways to eat asparagus, this recipe is a winner!
How to make bacon wrapped asparagus
First, you’ll need to remove the woody ends from your asparagus. Asparagus from the grocery store is trimmed a little, but mostly just to make the stalks uniform in size.
Similar to green beans, asparagus stalks have a natural point at which it will break. Bend the stalk at the thick end until it breaks off. You can also slice off the ends with a paring knife, if you prefer.
Toss the asparagus with olive oil, salt, and black pepper. You don’t need a lot of oil due to the fat in the bacon.
Gather three or four asparagus spears and wrap a bacon strip tightly around the bundle, making sure to slightly overlap the bacon on itself so it stays wrapped.
Place each bundle on a baking sheet with the end of the bacon down. This will prevent it from coming unwrapped while it cooks.
types of bacon
Wondering what kind of bacon to use in this recipe? Anything goes! I like to use a medium-cut bacon, which wraps easily around the asparagus and has lots of flavor. Extra-thick cut bacon can sometimes be difficult to wrap tightly. If using thin bacon, keep in mind that it will cook quicker, so keep an eye on it in the oven.
You can line your baking sheet with foil or parchment paper for easier cleanup, if you like.
I just cook it right on the pan, but an oven safe wire rack set onto the baking sheet will increase airflow and crisp the bacon even more.
Place in the oven and bake until the asparagus is tender and bacon is cooked.
Note that the bacon will not get as crisp as it would be cooked alone. You can cook it longer for a more crisp result, but check on the asparagus to make sure the tender leaf ends do not burn, especially if you are using thin spears.
What can I add to bacon wrapped asparagus?
While I love how delicious this recipe is with just a few ingredients, you can always tweak it with your favorite additions.
Add a trimmed green onion (scallion) to the asparagus spears before wrapping with bacon.
Sprinkle on grated parmesan cheese for the last five minutes of baking.
Drizzle the finished dish with balsamic glaze or sprinkle with crushed red pepper flakes.
Dredge the bacon in brown sugar and spices like in my million dollar bacon recipe, then wrap the asparagus.
Instead of regular salt, try your favorite flavored salts like smoked salt or truffle salt. Or, add a bit of garlic salt or garlic powder.
Asparagus wrapped in bacon is my absolute favorite way to eat it. One taste and you’ll agree: this easy dish deserves a place in your menu rotation.
