First, combine dough ingredients and mix until it comes together. Scoop onto a floured surface and knead, adding more flour as needed, for 5-7 minutes. Let rise.
Once risen, divide into 8 ropes, then cut each rope into 6 pieces.
Flatten each piece into a circle. Place a cube of cream cheese in the middle and bring the edges together to seal.
Carefully roll filled dough into a ball and set aside. Repeat with remaining dough.
Once all dough is filled, bring a pot of water with baking soda to a boil, then boil balls in batches for 10 seconds.
Arrange boiled pretzel dough on baking sheets and brush with egg wash.
Sprinkle everything bagel seasoning on top of the dough .
Bake until golden brown, rotating pans as needed. Let cool slightly and serve.
